Convivio MAXI rectangular volcanic cooking stone, measuring 23x37cm The cooking stone comes with an 18/10 stainless steel stand and wooden tray measuring 24x45cm, available in a dark or natural finish. The stand is made of 18/10 stainless steel and is designed to hold the stone and allow for easy handling. The stand holds the stone and enables it to be used in two ways, depending on the heat source and how you wish to use it. The stainless steel two-way burners help keep the stone at its ideal temperature. The two glass bowls can be used to serve salt and various sauces. The wooden tray is available in a dark or natural finish and features housings for the three burners and the steel stand. As with all the items in the Convivio range, the wooden tray and steel stand are designed for use in two different ways. Placing the stand upright leaves space for the burners to be placed under the stone to keep it hot, enabling meat and vegetables for four people to be cooked at the table. Turning the steel stand upside down and placing it on reverse side of the tray, food can be cooked on the hot stone (pre-heated in the oven or on a gas cooktop) for about 20 minutes, without the use of the burners. Tips and suggestions: Convivio cooking stones are designed for professional use. This means they are the same as those we supply to restaurants, featuring higher quality standards and a greater thickness of the stone. In restaurants they are generally heated at very high temperatures in ovens or on double-ring professional gas burners. Here we provide tips on how to use volcanic cooking stones best in household kitchens. If possible, it is best to pre-heat the stone in an oven. Place the stone in a room-temperature oven and set the heat to the highest temperature. Use the grill setting, placing the stone on the highest oven rack directly under the grill. If the oven does not have a grill, place the stone on the floor of the oven. When the oven reaches its maximum temperature, continue heating the stone for another 20 minutes. If you have guests, calculate approximately 35 minutes of heating time: 15 minutes for the oven to reach maximum temperature and another 20 minutes of heating time. A stone heated to 250°C will cook food for around 20–25 minutes without the need for burners. With the burners on, the stone will keep its temperature for longer. If you do not have an oven, pre-heat the stone on the largest hob of your cooktop set to the highest temperature. If possible, place the stone over two hobs, with both set to the highest temperature (preferably using a flame tamer). To reduce heat dispersion, we suggest covering the stone with a lid while heating. Pre-heating the stone on a cooktop will take between 35 minutes and about one hour, depending on the size of the burner. We advise against heating the stone directly on coals. Cleaning: To clean the stone, scrape the surface with a spatula while it is still warm and then scatter with salt and dry with a soft cloth or kitchen paper. If necessary, wipe the stone with a cloth soaked in vinegar. Cautions and warnings: Never pour water on a hot cooking stone to prevent temperature shocks. Never clean the stone with detergents of any kind. Take care when handling the stone as it is very heavy. The stone is fragile, so harsh knocks may break it. It is normal for the stone to develop superficial cracks and fissures over time.
