The NEAPOLITAN COFFEE MAKER is an emblem of Italian tradition. First invented in southern Italy, where it is also known as “a cuccumella”, the Neapolitan coffee maker is the centrepiece of a coffee-brewing ritual that has become a symbol of hospitality and conviviality. Made from 99.5% aluminium alloy, with heat-resistant Bakelite handles. Coffee brewed in a Neapolitan coffee maker is intensely aromatic in flavour and light-bodied. A medium/coarse grind is best for this kind of pot, unlike the more common Moka pot, which requires a finer grind. The Neapolitan coffee maker is made up of several parts: a boiler pot (with handle); a filter group, consisting of a canister and filter cap; an upper section with a spout and handle; and, finally, a lid. The coffee maker is easy to use. Fill the boiler pot with water up to half a centimetre from the steam valve (on the pot itself). Place ground coffee in the canister and screw on the filter cap. Carefully drop the filter group into the boiler pot filled with water. Attach the upper section with the spout, making sure the two handles are aligned. Heat on a stove until the valve begins to steam, indicating that the water has reached boiling point. Turn off the heat and then flip the coffee maker over so that the water drips down, “percolating” through the filter into the spouted section. After 5/6 minutes of percolation, remove the boiler pot and filter group, place the lid on the spouted section, and serve.
